The wasabi is real wasabi, and when we ordered individual pieces of salmon toro sushi, there was a tasteful dot of wasabi tucked between the fish and rice. Not only was there tsuma on the plate like normal, very good seaweed was present as well. I savored every bite of fish, some with eyes closed. We followed this with a Sashimi Deluxe plate each, (modified for me of course) where our server identified every piece of fish on the beautifully presented plate for us. We first ordered hot green teas and an avocado salad, and due to my gluten intolerance, the dish was modified by removing the sauce. A 530 PM table for two at Hatsuhana on a Wednesday yielded the absolute best sashimi that I have ever had the pleasure of tasting, as well as impeccable service from all staff.
